A Cut Above the Rest - Certified Angus Beef


You may be an experienced steak aficionado or maybe you just stick with what you like when you visit a steakhouse. From Filet Mignon to Ribeye, Tenderloin to New York Strip, no matter the cut you choose, here at Woolley's, each steak we serve is Certified Angus Beef ®.

This means that each cut of beef must pass the following 10 stringent quality specifications to earn the right to be called Certified Angus Beef ®:

Marbling and Maturity

  1. Modest or higher marbling – for the taste that ensures customer satisfaction, 
  2. Medium or fine marbling texture – the white "flecks of flavor" in the beef that ensure consistent flavor and juiciness in every bite, and
  3. Only the youngest classification of product qualifies as "A" maturity – for superior color, texture and tenderness.

The next three specifications ensure a uniform, consistent steak size:

  1. 10- to 16-square-inch ribeye area, 
  2. Less than 1,000-pound hot carcass weight, and
  3. Less than 1-inch fat thickness.


And finally, four specifications further ensure the quality appearance and tenderness of the brand:

  1. Superior muscling (restricts influence of dairy cattle), 
  2. Practically free of capillary ruptures (ensures the most visually appealing steak), 
  3. No dark cutters (ensures the most visually appealing steak), and
  4. No neck hump exceeding 2 inches (safeguards against cattle with more variability in tenderness).

Not only is each cut of beef certified, but it's also seasoned and cooked to perfection by our expert culinary team. Through the end of the year, we're pleased to celebrate the joys of the season with the following Italian wine specials. Perfect for an evening spent soaking in the warmth of the holidays, each wine was meticulously selected with your enjoyment in mind.

Tenute di Nozzole Le Bruniche Chardonnay (Tuscany) 9 / 34
Malolactically fermented with no oak. Wonderful acidity and ripe tropical fruit flavors.

Tenute di Salviano Turlo, Red Blend (Umbria) 10 / 38
Sangiovese, Cabernet and Merlot. Intense ripe fruit with soft subtle tannin. A delicious international style red wine.

Fattoria dei Graciano Svetoni Torcalvano Vino Nobile di Montepulciano 13 / 50
A true small production winery, this wine is a beautiful expression of sangiovese. Bright and lively the fruit notes include strawberry and blackberry with background notes of coffee, toasted oak and vanilla.

Agricola Punica Montessu, Isola dei Nuraghi (Sardinia) 15 / 58
A blend of Carignono (Carignan) Syrah, Cabernet Sauvignon, and Merlot, don’t miss an opportunity to try this rare Sardinian gem. And if you like this don’t miss its big brother Barrua!

Tenute del Cabreo La Pietra Chardonnay (Tuscany) 52
Single vineyard old vine chardonnay. This wine spends a year in oak followed by a six month rest in bottle. A beautiful expression of chardonnay.

Tenuta San Guido Guidalberto (Bolgheri) 85
Sangiovese, Cabernet Sauvignon and Merlot from the famed producers of Sassicaia. Very limited cases were sent to Minnesota, so enjoy!

Agricola Punica Barrua, Isola dei Nuraghi (Sardinia) 85
85% Carignan from Sardinia, this world class wine delivers in a big way. Dark fruit notes complement an herbal spice flavor with hints of red pepper and licorice.

Setti Ponti Oreno, Arrezo (Tuscany) 120
A famous super-tuscan made of Merlot, Cabernet and Petite Verdot, this wine is a monster, a big, tannic monster. It may eat your steak for you if you don’t finish it!

Michele Chiarlo Nivole Moscato di Asti (Piedmont) 8 / 24
A delicate expression of moscato this is a great way to end the evening!
